A Simple Baked Fish

When it comes to quick and easy meals, it doesn't get much better than a one pan recipe. This simple baked fish is a delicate yet zesty dish that takes just 20 minutes. Our Magic Seafood Blend is the only seasoning you will need for this. Simply put all the ingredients in the oven dish and bake. The result is melt in your mouth fish fillets with a lemon and herb flavoured buttery sauce. We recommend using fresh fish fillets from a local fish monger, but thawed fish fillets from the supermarket will work just fine as well. We used barramundi fillets for this recipe, but you can substitute with any fish of your choice.

This is a perfect mid week dinner as it requires minimal cleaning up which is arguably my favourite part of one-pan recipes. When designing this recipe, I wanted something that anybody could do, required minimal effort that resulted in a well balanced and delicious meal. This one ticks all the boxes. Serve with our Spiced Rice or a simple salad.


What you will need:

2-3 tsp Magic Seafood Blend

4 fish fillets (medium thickness)

1 punnet of cherry tomatoes

1 bunch of parsley & dill

2 lemons

125g unsalted butter

Olive oil

Salt & Pepper


Preheat oven to 180 degrees Celsius. Line oven dish with baking paper.

In a small non metallic mixing bowl, combine unsalted butter, Magic Seafood Blend, a pinch of dill & parsley, the zest of one lemon, salt, pepper and melt together in microwave or oven.

Drizzle olive oil on baking sheet, add the cherry tomatoes and fish fillets. Season with salt and pepper on both sides.

Drizzle over the seasoned melted butter mixture. Add more lemon zest & herbs. Cut one lemon into quarters, squeeze juice over fish and place lemon sections in baking tray.

Cook for 15-20 minutes depending on fish fillet thickness. Baste occasionally.

Remove from oven, serve & enjoy!
